Dried Ewedu leaves are the dehydrated form of fresh ewedu, a leafy vegetable from the plant Corchorus olitorius. They are widely used in West African cuisine, especially in Yoruba cooking.
Fresh ewedu leaves are known for their soft texture and naturally slippery (viscous) quality. To preserve them, the leaves are washed and sun- or air-dried, resulting in a lightweight product with a longer shelf life. Once dried, they appear dark green and slightly brittle.
Before cooking, dried ewedu leaves are usually soaked in warm water to rehydrate them. When cooked and blended or whisked, they regain their signature smooth, slightly slimy consistency and mild, earthy flavor.
They are most commonly used to prepare Ewedu soup, often served with amala and accompanied by stew and assorted meats or fish.
